Instant Pot Chicken Rice Soup
Sauté the vegetables
On the Instant Pot sauté setting, cook chopped onions, celery, and carrots until the onions are tender.
Add The Rest
Add sliced mushrooms, minced garlic, wild rice, chicken breasts, a bay leaf, seasonings, chicken broth, and water.
Cover and cook on high for 35 minutes.
Shred The Chicken
Remove the chicken from the instant pot and shred it with 2 forks.
Temper the Eggs
Whisk eggs in a bowl and add warm soup broth before pouring them into the pot. This makes the soup rich and creamy with NO dairy or cream!
Put It All Together
Add the eggs, shredded chicken, frozen peas, and lemon juice to the rest of the soup. Serve & enjoy!
