4 Zucchini Olive Oil 1 lb Ground Chicken 1 tsp Italian Seasonings 2 Garlic Cloves ½ a Yellow Onion 1 Bell Pepper 2 c Marinara Sauce 3 tbsp breadcrumbs ⅓ c Grated Parmesan ⅓ c Shredded Mozzarella
Cut the Zucchini
Cut and hollow out the zucchini and arrange them in a baking dish.
Cook the Ground Chicken
In a large skillet, cook the ground chicken, onion, bell pepper, and garlic. Add the marinara sauce and allow it to thicken.
Season the Zucchini
Drizzle some olive oil over the zucchini and season it with salt, pepper, dried oregano, and dried basil.
Fill the Zucchini
Fill the zucchini with a mound of the Italian filling. Use leftover filling to stuff other vegetables or add to pasta.
Add Cheese and Breadrcumbs
Combine parmesan, mozzarella, and breadcrumbs in a small bowl. Sprinkle it over the top of the zucchini.
Place in the Oven
