Make a pitcher of Frozen Passion Fruit Margaritas to enjoy by the pool on hot summer days. Have this crowd-pleasing frosty margarita ready in just 15 minutes!
5 ½cupsfrozen passion fruit (2 bags, or 24 ounces)
1 ½cupstequila
½cuptriple sec
½cupagaveplus extra for rim of the glasses
¼cupfresh lime juice (from about 2 limes)
2 to 3cupsice
kosher salt or tajin
Instructions
Add 2 tablespoons agave and salt (or Tajin) to separate shallow bowls or plates. Coat the rim of 6 glasses with a light layer of agave by circling it in the bowl. Then, dip it in the salt (or Tajin) and circle it in the bowl to coat. Place glasses in the freezer to set.
Add passion fruit, tequila, triple sec, agave, and lime juice to a blender. Blend until smooth.
Add 2 cups ice and blend until thick. Add another 1 cup of ice if you prefer a thicker drink.
Pour into prepared glasses and serve with a garnish of lime slices.
Notes
I used the Pitaya Foods passion fruit pieces found in my grocery store's freezer section. I like them because they are pre-frozen and seedless.
If you can't find frozen passion fruit, you can buy passion fruit juice and freeze it in a ice cube tray. Look for a juice with minimal added sugar, or adjust the amount of agave in the recipe.
This recipe freezes really well. For a sorbet-like consistency, store blended margarita in a freezer-safe container in the freezer. Freeze for at least 4 hours or overnight. Scoop with an ice cream scoop and serve with a spoon, or wait until it lightly defrosts to drink.
