This Jelly Chicken is baked in a simple and delicious jelly sauce. It's sweet, savory, and perfectly tender. All you need is about 10 minutes to get in the oven!

  • 1 red onion, sliced
  • 3 boneless skinless chicken breasts (about 2 pounds)
  • ½ tesapoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper
  • ¼ cup blueberry, strawberry, or apricot jelly
  • 3 tablespoons whole grain mustard
  • 2 tablespoons balsamic or red wine vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon pure maple syrup
  • 1 cup fresh blueberries, 5 fresh strawberries (cut in half), or 10 dried apricots (cut in half)

Instructions

  • Preheat oven to 425 degrees F. Spray a baking dish with nonstick spray.
  • Add sliced onions to the bottom of the baking dish.
  • Place chicken breasts on top of the onions. Season both sides with onion powder, garlic powder, salt, and pepper.
  • In a medium bowl, add jelly of choice, whole grain mustard, vinegar, olive oil, and maple syrup. Whisk to combine.
  • Pour the jelly mixture on top of the chicken breasts. Add fresh blueberries, strawberries, or apricots on top.
  • Bake chicken, uncovered, for 30 to 35 minutes, or until a thermometer inserted in the thickest part of the chicken reaches an internal temperature of 165 degrees F.
    For best flavor, spoon jelly sauce over chicken every 10 minutes while cooking.
