This Homemade Alphabet Soup is the best year-round soup that can be made in under an hour! It's warm, comforting, and sure to fill you up. Packed full of fresh vegetables, alphabet pasta, and tons of flavor, it's a healthy copycat version of the nostalgic canned recipe.
Heat a large pot over medium heat. Add olive oil. Then, add onion, carrots, celery, and green beans. Cook about 5 minutes, or until the onions start to soften.
Stir in garlic. Cook another 1 minute.
Pour in great northern beans, broth, and diced tomatoes. Season with bay leaves, oregano, thyme, salt, and pepper. Stir to combine.
Bring soup to a boil. Decrease heat to low and simmer for 20 minutes.
Meanwhile, bring a medium pot of salted water to a boil. Add the alphabet pasta and cook according to the package instructions, generally about 8 to 9 minutes.* Drain pasta.
When soup is done simmering, turn off heat, remove the bay leaves, and stir in parsley.
Add a spoonful of alphabet pasta into individual bowls, then ladle soup on top. Serve soup hot with crusty bread or crackers.
Notes
*You can cook the pasta in the soup broth, but I like to do it separately and then add it to individual bowls so it doesn’t turn mushy.
If you can't find alphabet pasta, you can use any other small pasta like Ditalini, Orzo, or Acini di Pepe.
