Granola Cups are the best breakfast option for when you're looking for something slightly sweet, crunchy, and packed full of fresh fruit. You take delicious homemade granola, form it into a bowl shape, bake it for 20 minutes, and fill it with your favorite yogurt and fruit. It's a unique take on the classic bowl of granola topped yogurt!
Preheat oven to 325 degrees F. Spray a nonstick muffin pan generously with nonstick spray.
Add all ingredients, besides yogurt and berries, to a medium bowl. Mix to combine.
Add ¼ cup of the granola mixture to each muffin cup in the pan. Use your fingers to press the oats into the edges of the pan to form a bowl shape.
Bake for 20 to 25 minutes, or until lightly golden brown. Let cool for 30 minutes before removing granola cups from the pan.
Fill the center with yogurt and top with berries or fruit of choice. If the yogurt is too tart, you can top each granola cup with an additional drizzle of maple syrup or honey.
Notes
Make sure to let the granola cups cool for a full 30 minutes before trying to remove them from the muffin pan! This will allow them to harden and keep their shape. If they're not cool when you try to remove them, they will still be slightly wet and crumble into pieces.
To make them gluten free - For gluten free granola cups, just make sure to use gluten free old fashioned oats.
To make them dairy free - These granola cups are made naturally dairy free. Just use a plant based yogurt for the filling!
To make them vegan - These are also naturally vegan, but again just make sure to use a plant based yogurt for the filling!
