If you have just 15 minutes, you have enough time to make this bright, fall-flavored vinaigrette! This simple Pumpkin Salad Dressing is the perfect addition to your favorite salads. I love to pair it with this hearty Pumpkin Couscous Salad, which is basically like fall on a plate!

Ingredients
- ½ cup white balsamic vinegar
- ¼ cup canned pumpkin puree
- 2 tablespoons pure maple syrup
- ½ teaspoon dijon mustard
- ½ teaspoon fresh thyme leaves
- Pinch of garlic powder
- ¼ teaspoon ground cinnamon
- ¼ teaspoon kosher salt
- ¼ teaspoon black pepper
- ¼ cup avocado oil, or other neutral tasting oil
Instructions
- Add all ingredients, besides oil, to a medium bowl or glass jar. Whisk to combine.
- While whisking, slowly stream in oil to help it combine.
- Shake jar or re-whisk in bowl just before serving. Serve on your favorite salads, like this pumpkin couscous salad.
Notes
- This pumpkin dressing can be stored in the refrigerator for up to 5 days!
- If you can’t find white balsamic at the grocery store, you can use sherry vinegar, white wine vinegar, or rice wine vinegar instead.
