In addition, I like to buy my hamburger buns in the bakery section of my grocery store for the freshest possible.
Ingredients
A few notes about the ingredients:
- Sun Dried Tomatoes: It is recommended that you us sun dried tomatoes packed in oil for this recipe. They add great flavor and moisture to the burgers.
- Grated Parmesan Cheese: I like to buy my grated parmesan cheese in the fresh cheese section of the grocery store (near where they sell the wedges of cheese, not the pre-packaged sliced cheeses). It's fresher and has better flavor when it's freshly grated.
- Ground Chicken: I love using ground chicken instead of ground beef in my recipes. I've used it to make healthier meatloaf, meatballs, and sliders. My favorite brand is Perdue, but you can use any brand you like, just make sure the package doesn't appear too watery.
- Mozzarella Cheese: Sliced mozzarella cheese is best for melting on top of the burger. If you don't like cheese on your burgers, you can leave it off.

Instructions
- Step 1: In a medium bowl, add mayonnaise, sun dried tomatoes, garlic, parmesan cheese, italian seasoning, and basil. Stir to combine, then cover and place in the refrigerator until ready to use.
- Step 2: Preheat your grill to 425 degrees F.
- Step 3: Prepare the chicken burgers by adding ground chicken, sun dried tomatoes, garlic powder, italian seasoning, salt, and pepper to a large bowl. Mix until just combined.
- Step 4: Form the ground chicken mixture into 4 hamburger patties.
- Step 5: Place patties on the grill. Cover the grill and let cook for 5 to 7 minutes without touching the burgers. When ready to flip, the patties should lift from the grill pretty easily and have set grill marks.
- Step 6: Flip the burgers and cook the other side for another 5 to 7 minutes, or until the chicken is cooked to an internal temperature of 165 degrees F.
- Step 7: In the last minute or two of cooking, add a slice of mozzarella cheese on top of each burger and cook until melted. Remove from heat.
- Step 8: Optional: Grill the buns, flat-side down, for about 2 to 3 minutes to toast.
- Step 9: To assemble: Place a chicken burger on top of each bottom bun. Spoon some of the aioli on the top bun. Place a handful of arugula on top of the chicken burger, then quickly add the top bun on top of the burger to keep the arugula in place.
⭐️ Tip: I like to make the aioli as the first step so the flavors have time to blend together. The longer the sauce sits in the refrigerator, the more the flavors will shine through. If you'd like to make the sauce ahead of time, you can make it up to 5 days ahead of serving.
Substitutions and Alterations
- Ground chicken - If you can't find ground chicken at the store, ground turkey would be the next best thing. You can use ground beef too, but it'll provide a different flavor and texture.
- Mozzarella cheese - I like mozzarella because it is mild and fits the flavor profile of Marry Me Chicken. However, you can use any cheese you like. Cheeses such as munster, provolone, swiss, and sliced parmesan would also taste great.
- Arugula - I like the peppery bite of arugula on these burgers, but you can use iceberg, romaine lettuce, or spinach instead.
How to Store Marry Me Chicken Burgers
To store: Store Marry Me Chicken Burgers without the toppings in an airtight container in the refrigerator up to 5 days. The aioli should be kept, covered, in a separate bowl in the refrigerator until ready to serve.
To freeze: You can freeze Marry Me Chicken Burgers up to 6 months. Freezing the sun dried tomato aioli is not recommended
To reheat: Remove burgers from the freezer and defrost in the refrigerator overnight. Place back on the grill, preheated to 350 degrees F, and cook until just warmed through, about 10 to 15 minutes. Make the sun dried tomato aioli prior to heating and serving.
Top tip!
Don't move the burgers around right after you place them on the grill! Once they're on the grill grates, leave them be so they can develop beautiful grill marks. Once they're cooked enough, they will easily lift from the grates and can be flipped. Flip and allow them to cook untouched again to develop marks on the other side.
Moving the burgers around too much may cause them to stick, fall apart, or lack caramelization.
