A few notes about the ingredients:
- Mayonnaise: Mayonnaise is the base of this sauce. I like it for it's mild flavor and richness. You could use plain greek yogurt instead, but the sauce will become a lot more tangy.
- Sun Dried Tomatoes: I recommend sun dried tomatoes packed in oil for this recipe. Their juiciness and softer texture lend a lot of flavor to the sauce.
- Grated Parmesan Cheese: I like to buy my grated parmesan cheese in the fresh cheese section of the grocery store (near where they sell the wedges of cheese, not the pre-packaged sliced cheeses). It's fresher and has better flavor when it's freshly grated.
- Fresh Basil: Fresh basil is highly recommended in this sauce because it compliments the sun dried tomatoes really well. If you really can't find fresh basil, you can use ½ teaspoon of dried basil instead.

- Step 1: In a medium bowl, add mayonnaise, sun dried tomatoes, garlic, parmesan cheese, italian seasoning, and basil. Stir to combine.
- Step 2: Cover and place in the refrigerator until ready to use, up to 5 days.
⭐️ Tip: Chop the sun dried tomatoes pretty small so the sauce can spread well on burgers or other meats. The smaller the tomatoes, the better the flavors of the sauce will come together.
Substitutions and Alterations
- Mayonnaise - I highly recommend using mayonnaise as the base of this recipe. However, if you want a higher protein base, you can use plain greek yogurt instead. But be aware that the flavor will change and become a lot more tangy.
- Fresh basil - Fresh basil is a great addition to this aioli. However, in the months where it is hard to find good fresh basil, you can use ½ a teaspoon of dried basil instead.
How to Store Sun Dried Tomato Aioli
To store: Store sun dried tomato aioli in an airtight container in the refrigerator up to 5 days.
To freeze: Freezing is not recommended.
Top tip!
Make this sauce before preparing the rest of your meal. This will allow the sauce to sit in the fridge for a little bit which will let the flavors blend together longer. The longer the sauce can sit, the more flavorful it will become.
