- Honey Crisp Apples: The apples add a bright fall flavor to these homemade sausages. I like honey crisp, but pretty much any variety of apple should work.
- Pure Maple Syrup: Maple syrup adds a touch of sweetness for a more breakfasty flavor. You can omit it if you prefer, but I love it in combination with the apples and other seasonings.
- Marjoram: Marjoram is a dried herb, similar to oregano. It gives the ground chicken a sausage-like flavor. It can be found in your grocery store's dried herbs and spices aisle.
- Sage and Cinnamon: Both sage and cinnamon, combined with the dried marjoram, bring a fall-focused flavor to the sausage. They're warm, comforting, and incredibly flavorful!

Instructions
- Step 1: Add all ingredients, besides olive oil, to a large mixing bowl. Mix to combine.
- Step 2: Form ground chicken mixture into 8 medium patties and place on a baking sheet or plate.
- Step 3: Heat olive oil in a large skillet over medium heat. When the oil is hot, transfer the chicken sausage patties into the skillet, leaving some space between each one. You may need to cook the patties in batches, depending on the size of your skillet.
- Step 4: Cook each patty for 3 to 5 minutes, then flip and cook another 3 to 5 minutes, or until lightly golden brown and cooked to an internal temperature of 165 degrees F.
- Step 5: Serve apple chicken breakfast sausage warm as a side to eggs, toast, potatoes, or any of your favorite breakfast foods. You can also serve them on English muffins with eggs and bacon for a breakfast sandwich.
