Ingredients
A few notes about the ingredients:
- Medjool Dates: Medjool dates are the base of this recipe. They are perfectly sweet, chewy, and hold their shape. Make sure to remove their pits and stems before adding to the food processor!
- Oats: Old fashioned oats help in binding the ingredients together. They soak up the wet ingredients, helping them stick to the dry ones. They are also good for added fiber.
- Almond Butter: I like to use almond butter because it provides a neutral nutty flavor. It also adds some protein. Make sure to stir the separated oil into the almond butter in the jar before adding it to the food processor.
- Pumpkin Puree: Canned pumpkin puree adds some vitamins to these bliss balls. It also helps in providing some moisture that allows the rest of the ingredients to bind together.

Instructions
- Step 1: Add all ingredients, besides the pumpkin puree, to the bowl of a food processor. Pulse until it forms fine crumbles.
- Step 2: Add pumpkin puree and pulse again until the mixture turns sticky and starts to combine.
- Step 3: Using a cookie scoop, form small balls of the mixture, about 1 to 2 tablespoons each.
- Step 4: Optional: Form into a pumpkin shape by flattening the balls lightly with your hand. Use a spoon to add the lines on the sides of the pumpkin. Place a chocolate chip on top for the stem.
- Step 5: Place balls on a baking sheet and place in the refrigerator for at least 30 minutes to set.
- Step 6: Store in an airtight container in the refrigerator for up to 10 days. You can also freeze these pumpkin bliss balls for up to 2 months.
⭐️ Tip: While you roll and form these pumpkin bliss balls, they will be slightly oily from the almond butter. But don't worry! When they are refrigerated for storage, the oil will solidify and make them less messy.
Substitutions and Alterations
- Almond Butter - I recommend using almond butter for it's neutral taste, but peanut butter, sunflower seed butter, or cashew butter would work well too!
- Pumpkin Pie Spice - Adds great fall flavor, but can be substituted for just ground cinnamon or a combination of ¾ teaspoon cinnamon, ¼ teaspoon nutmeg, ¼ teaspoon ground ginger, and a pinch of ground cloves.
- Canned Pumpkin - Canned pumpkin is a great way to add pumpkin flavor, but if you don't have any on hand, you can simply use water instead.
How to Store Pumpkin Bliss Balls
To store: Store pumpkin bliss balls in an airtight container in the refrigerator up to 10 days.
To freeze: For longer term storage, these snack balls can also be stored in the freezer for up to 2 months. Keep them in a zip top bag with excess air removed.
When ready to eat again, place the balls in the refrigerator overnight, or allow them to come to room temperature on the kitchen counter. You can also just pop them in your mouth, while still slightly frozen!
Top tip!
Make sure you remove the date pits! They're hard and inedible, so they need to be removed prior to blending.
